How to control bacteria for Sydney offices?

19/05/10

In Sydney, there are quite lots of office kitchens in use. The best way to control bacteria there that can contaminate your food and make you sick is to create an environment where it does not feel welcome. The two kinds of bacteria to watch out for are staphylococcus which is spreading by hand contact and salmonella which is spreading by contact with uncooked meat and poultry.

Make sure you wash your hands thoroughly before and after cooking. Plain soap and hot water kills the majority of bacteria on your hands. Thorough scrubbing should get rid of the rest. There is no need for antibacterial soap. If you want to use it go ahead, but it can be harsh on your hands and can leave you more open to infection.

Keep your fridge set at the correct temperature: 4-9 degrees is the safety zone for commercial office used fridges.

Cover food before you put it in the refrigerator to stop any cross contamination.

Keep your office or commercial kitchen clean with bleach and water, hot soapy water or a commercial cleaner.

Use separate chopping boards, one for meat and another for everything else. Clean boards thoroughly with very hot soapy water and then wipe with a mild bleach solution (a few drops per litre of water). Wipe up meat juices with paper towels, not your regular sponge. You can also soak boards overnight in a sink full of water with a dash of bleach. Dry thoroughly the next morning.

Washing dishes by hand is really easy. And there will be times when you need to wash by hand, Not everything can go in the dishwasher and not everyone has one. It is important to know how to wash by hand, to keep your dishes looking their best. And best of all, it is very simple. (use good detergent, one sponge, one brush, tea towels)
